View Full Version : BBQ cooking - Weber kettle style

Having just recently acquiring one of these, I'm keen for some tips/recipes you guys have, did a Pork Roast for xmas and it was good, nice smokey flavour from the woodchips, I prefer the pellets in the smoker box for the smokiness flavour.
I got some tips from the Weber site as to amount of briquettes to use etc, it's the 50 odd cm one.
I want to do a Scotch Fillet this weekend, keen to see if anyone has some tips, that and some pork ribs.
I will pick up a remote meat temp sensor this week too.

All about the temperature and placement of the coals. The rest is just normal cooking.
Scotch you'll probably want an even spread of coals underneath where you're cooking the steak. Ribs you'll probably want a pile or 2 off to the sides and ribs in the centre so they slow cook.
Will take some practice but worth it i reckon.
There was a show on channel 10 called keepers of the flame or something similar. You could probably find it online. They did heaps of recipes on a webber over coals that you could copy.

I've been cooking on mine for years and I love it. Often do whole chickens, and ribs most weekends. Few mods you can make to them as well such as cutting a band from a 44 gal drum to put between the lid and base, then add another rack for a massive rib cook up. There is heaps of YouTube videos, the yanks are mad for them.

I had a knock off Jumbuck one for ages then eventually binned it and bought a proper Webber so much better. I usually do ribs on mine but I have a lot of trouble trying to keep consistent temps (have temp gauge). Mostly cook ribs, roast beef or chicken indirect heat ie: coals all stacked to one side but I have also cooked steak direct over the coals.
I have a coals kettle that I use sometimes, I will sit that on a small portable gas cooker and get the coals ashed over this way. Or if I am feeling lazy I will get the coals burning with bbq lighters then get out a hot air gun and blast the coals like a furnace to get them up to temp.
Get a charcoal chimney from bunnings, heat all your coals in minutes with a sheet of newspaper. Best thing i ever bought.

I blast the beads with my leaf blower to get them fired up quickly. Works a treat hahaha.

I've been looking at automated temperature control for my ugly drum smoker to even out the temperature fluctuations. I've seen plenty of kits for weber kettles......would make cooking "low and slow" a shedload easier!

Just finished some awesome beef ribs - left my shit late, so 2 hrs in pressure cooker in a nice stock after being dry rubbed for 24 hrs
1 1/2 in weber and they were fantastic
Reduced stock from pressure cooker to baste with, and used a home made monkey gland sauce as well
