I'm heading to NZ for 3 weeks on the 29th of June, and was wondering if anyone has been before and can recommend some off the beaten track things that they have done over there that they would recommend.

I'm driving around the South Island for 3 weeks, starting off in:
Christchurch
Driving to Mt Cook, doing Mt John Stargazing Tour
to Dunedin
to Te Anau, doing Milford Sound Nature cruise
to Queenstown, doing 3 Day Ski Pass, Paragliding, Half Day Mountain Biking, 12,000ft Tandem Skydive
to Fox Glacier, Doing half day glacier walk
to Greymouth, doing Quad Biking
Then back to Christchurch to fly home.

I've Google Earthed some of the routes, and the scenery is looking to be pretty incredible, especially being the middle of winter. Fizzing over the Landscape tog opportunities.

I lived in Christchurch until 2010. not a lot to see in Christchurch since the earthquakes. Akaroa is only about an hour out of Christchurch and is a really cool place. Hamner springs isn't far out of the way coming from Greymouth to Christchurch and it has some awesome hot springs. Do the shotover jet ride in queenstown, that shits insane

Have you planned what mountain biking you want to do? I dunno what tracks will be open during winter, but Coronet peak is amazing. I rode it in summer and still froze my ass off... QTown got to 6deg.

Make sure you have a FergBurger in Queenstown.

I've heard about Fergburger! I'll have to give it a go.

With the Mountain Biking, I'm not actually sure, I'll have to look into it.

Will look into said shotover!

Tobaggon hill thingo, think its in Christchurch is a bit of fun if you don't use brakes! I think at the top of the same place there is a giant swing which goes out over the edge of the hill, was decently scary.

Did quad biking in the wet when I was there, was good fun.

That's in Queenstown up the Gondola, unless CC has the same.

+1 for Fergburger & Fergbaker (pork belly and apple pie is ridiculous)
Hamner springs is a wicked spot in winter
If you venture down the bottom, stop into Bluff for the best oysters you'll ever have.
White water rafting in Queenstown is worth it if you've never done it.

Just for your info. Franz Josef is better than Fox. Fox is pretty much fkd now.
Doubtful sound is better than Milford but the road into Milford has some really good scenery (If it is passable)
The Gondola/Queenstown restaurant on the top of the hill whatever it is called is shit. Just dont bother with it.
Wanaka is worth going to.
