I've done a few batches. Becks, fat yak and just a coopers lager. Just waiting for cooler weather.
I've been at it about a year. Made some very good batches and some very average ones. The last batch we tried to make super strong using bulk sugar and champagne yeast, just turned out sweet and fruity (like me).
stumps.

I tried once,
It was far too hot at the time, worst tasting pile of puss ever. I was at uni at the time so put in the effort trying to consume it.
Now that I am more mature and have a decent house I might try it again

Would like to try brew alcoholic ginger beer. Not sure about normal home brews, had some decent and some very average home brews and not sure I want to invest the time and $$ to potentially end up with 100 bottles of beer only good for mates and in laws.
stumps.

Mad docker if you figure out how to do that please let me know. I'm sure i could Google it but much prefer for you to tell me

I do about 5 "kit and kilo" type brews every year. The hoegaarden and a dark winter stout are the ones I keep coming back to.

Been doing it pretty regularly for ~8 years. Recently started doing wines, meads and spirits as well.
Favourite so far is a cherry porter, dark-as-fuck, smooth-as-fuck with a nice fruity nose and aftertaste filled out by a wonderful porter body.
Would like to try brew alcoholic ginger beer.Use real ginger, about a tablespoon of grated up fresh stuff, put it in a mug of boiling water to sterilise it, and just chuck in with whatever kit you're using. Tastes 3x as good.

My dad has been doing beer for around 20 Years, Now days he does his beer into kegs. Has about 5 beers/ciders on tap at home
He also has been doing spirits for around 15 years. He does it all with the charcoal filters, wood chips etc
The biggest problem ive seen/heard over the years is people arent sterile enough with their cleaning and they try to rush everything
And a shameless plug for my dad and tell him Jnr sent you
He works at

Plastic bottles are the shit. Dad was at it as long as I've lived (and gets his stuff from beer craft these days).
Glass chain explodes, decent plastic bottles worked and didn't change the taste. Poor into s cold drinking glass if you're precious about dat feel.

I know those glass chain explode too well. Dad changed to plastic coke bottle about 15 years ago before going to kegs.
CSB When we left our Gingin house, which only had glass bottles for about a year out of the 10 we lived there. We were doing the final clean out of the shed and we were finding shards of glass in the most randoms spots
Fuck beer do spirits!...
Did i mention i have a hardly used still for sale too by the way!?
Brewed for all my uni years (7). Also worked @ The Beer Store in Noranda.
Been quite a few years since my last brew.. keen to get back into it again though.
Used to stick to wheat beers mainly, with the odd IPA to mix it up. Used to have 4-5 brews on rotation with a couple of mates. Endless beer for study.
*Use Grolsch flip top green bottles. Easy enough to clean/change seals with each brew :)
I remember the first few months trying to drink enough cases of the Grolsch to have enough for our own batches.. good times!
Used to get into it, thinking about doing it again.
Will get a thermostat and another fridge to regulate brew temperature this time, brew mart bassendean have one that you plug into fridge and heater thingy for $70.
I have a keg setup in a old fridge, looking at buying new Kegerator this week :)

Nah, I put it together with off the shelf ingredients. Use a aussiehomebrewer forum recipie as the base, and go from there.
Keen on the cherry porter recipe, sounds mint.

Been an all grain brewer for some time now, extract is to restrictive especially if you want to balance out weird and unusual adjuncts with more complete combinations of hops or if you prefer to stick to the reinheitsgebot you can give your beer way more complex flavouring. I mash in pretty much every weekend with my own designed recipes or I hassle over seas craft breweries for their gain and hops bills for beer you can't get here . It's a good time for getting your saisons on right now, I have a nice honey ginger in my Primary as I type, it's a doosie at 1080OG I'm hoping for about 1015 FG so should be sweet and strong (about 9.2% ABV). Have heaps of gear, mash/lauter tuns, Copper kettle, temp control fermentation cabinets etc. I lager all my brews (yes even my ales) so I have quite a collection of cask and bottle conditioned beer, in fact I can't get through it so I throw quite a bit out too.
Trying to cut back, enjoy IPA and lots of ale variants coopers style. Had a crack at a few largers fermented at around 11 degrees but haven't got it down yet.

Speaking of IPA's I got one on the boil.
http://i44.tinypic.com/1h9eg6.jpg
This is an American style IPA (east coast) made entirely from grain and three different hop additions in the kettle, I'll also dry hop about 5 days into primary fermentation.
For those interested OG is about 1065 with an expected attenuation of 76% bottoming out at FG1015 Should be about 6.5% ABV. Malty, hoppy and fresh.

That's a nice kettle, Autopilot!
Where do you get one of those? Always been interested in getting one but never had the cash to drop all in one go on a single piece of kit...
Or more precisely, never had permission from the financial department...

I made an awesome ginger beer once in uni
Then I discovered I could buy 96% ethanol for $8/L and the vat was turned into a punch mixer

Hey Dagon, I buy most of my equipment from Brewmart in Bayswater, Neil the guy that runs it is very friendly and helpful. That particular kettle can be had for $100 and it comes with a thermometer and a tap. See here (http://www.brewmart.com.au/brewmart-shop/catalogue/?detail&ItemID=3955&SZIDX=36&CCODE=18100&QOH=0&CATID=374&CLN=1). I use a 3V system (mash/lauter tun, kettle and fermenter) however that kettle is big enough for BIAB (brew in a bag), brew house efficiency is a bit lower than using a mash tun but it's a good start to all grain brewing, alternatively you can just buy some coopers unhoped malt extract and do your own hop and adjunct additions in the kettle.
I'm making a Marzen/Oktoberfest beer this weekend foir some mates, I can post up some pics of the whole process if you are interested?

Anyone done cider?
Im thinking about getting one of these kits and giving it a shot but then saw it has their own apple mix. Would like to experiment andmake my own apple combos

I've made Mad Millie Cider before, it's not a bad kit albeit a bit small in volume. Whatever you do stay away from Brigalow kits. Pressing your own apple juice is the way to go but you will need quite a few kilos of very if not a little over ripe apples. When I did my own press my apples and pears weren't ripe enough and I didn't get enough sugars to get a decent ABV. You can get all your Cider needs from Brewmart in Bayswater including the MM kits and replacement kits. www.brewmart.com.au (http://www.brewmart.com.au/brewmart-shop/catalogue/?detail&ItemID=4100&SZIDX=0&CCODE=46050&QOH=5&keywords=cider) If you want to go without a kit and go from scratch you can still buy the MM cider yeast from there or get this (http://www.brewmart.com.au/brewmart-shop/catalogue/?detail&ItemID=3099&SZIDX=0&CCODE=11990&QOH=3&keywords=cider), this (http://www.brewmart.com.au/brewmart-shop/catalogue/?detail&ItemID=4116&SZIDX=0&CCODE=46060&QOH=45&keywords=cider) or this (http://www.brewmart.com.au/brewmart-shop/catalogue/?detail&ItemID=36&SZIDX=0&CCODE=31500&QOH=964&keywords=cider).

I brewed for 15 yrs and had beer and cider down pat.
When Bootleg Brewery down south first started, their beer was crap, and they had a brew comp of which I won all bar one class, and the buggers tried to get my recipies out of me - good luck pingpingpingpings
- go with a tinned kit to start with, and play around with small amounts or caramel to recreate strongbow if that is your current drink.
Straight out of the can kit they will be very dry usually, but the caramel really imporves the flavour
Also, don't be in a hurry to drink it - let it age for 2 or 3 months min if you can be patient.
I only distil vodka these days
