Well i'm keen to try some American style slow cooked food but i was not happy to just use a oven to cook them, true American style ribs, brisket pork shoulders need a slow cooking for 3 to 4 hrs for ribs and upto 9 for larger cuts ........So here is my smoker.

I got two barrels off Joe (Ballsac) and got them sand blasted. (auto blast myaree)

Cut the end off one barrel

Cut the corners off, quite a lot of trimming was required :( , this was time consuming.

test fitting, must of done this 30 times,

welded them together and ground the welds back (a little) this was only the start.

I have used an old brazier as a fire basket, modified it so its easier to load the charcoal

Now i added a door to the bottom barrel to allow access to the fire.

Chasing a few things

1. Need some material to use as a the rack, must be mild or stainless steel 1.5 x 0.6 m, gridmesh or reinforcement mesh would suit.
2. about 8m of 25 x 2 or 3mm flat plate, again mild steel.

Things left to do.
1. reinforce the doors and openings, the drums are a bit flimsy
2. install grates for the MMMMMMEAT
3. Paint it High temp paint.
4. Burn it in.

Speaking of spit roasts i will add this feature to my bbq. I know why they are expensive.....time time and more time. i think that i have put 30hrs into it so far.

Pizza oven, that would be a cool project but not this year.

Seeing as you cant get stainless steel racks off the shelf that are 600mm wide your options are very limited.

its unbelievably hard to source SS mesh and even thought you can get expanded metal in SS...no one has it.

so 10mm stainless rod and my trusty arc welder

Trim up the rods to make neat racks

Drill holes in the bottom of the barrel to transfer the heat and smoke. test fit the racks.

Awesome. You should fire it up empty for the first time so all the solvents / paint fumes / whatever can burn off and not taint your first cannibalism experiment.

Meaty goodness.

Christmas eve i made up a couple of different dry rubs and had them sit on the meat for about 6 hrs. I also made a mop sauce to baste the meats every hour. 13Kg meat went in.

COOKING TIME 9HRS!!!!

Got up at 1am on Christmas, these are the results.

here is a break down of the costs.

Barrels i can source for free (Joe, Ballistic)
sand blasing $100
Stainless Steel $200
cutting disks, blades, welding wire, handles, wheels, drill bits, paint, ect $150.

labour is the killer, i have spent 40hrs to get it to where it is. clearly second time round would be less and i would budget 30hrs.

I built it as there is nothing in Australia that i could buy.

The total cost for me to make a new BBQ would be $2000.

if you sign up to ALM, we will be holding BBQ's through the coming year. Just have to pay a small amount to cover costs to attend. :)

well i picked up this rig, almost brand new, good condition. will use this for small bbqs and BBQ sauce station.

temp control is more difficult on this than my big BBQ, will need some practice. temp seems to spike very quickly then hard to bring back down.

because the cook time is so long, the rub can be put on just before you cook.

I tend to let it sit on the meat for a bit, 5 hrs?

will be cooking ribs on the weekend, will keep you posted.

I do on beef ribs, lesser people do not - it can be a very difficult process with dry aged ribs, but can be alot easier if you bring the tempreture up a little below room tempreture. By doing that they also need to be cooked immediately after, so you need to make sure your rubbing has been done.

add more.......... simple.

this type of cooking takes constant attention and monitoring of air flow, temp, coal level, moisture.

cook time is up to 12 hrs .................so basically a lot of effort.

Market City Meats is open today, American pork ribs are go from there - stay away from the beef ribs, we never used to trim them :O.

In all srs'ness but, 3 hours @ 170c was probably rushing it a little bit. I was surprised how well the oven held temp. I put a small log in there half way through and spiked the temp to about 200 which probably wasn't really required. 3hrs isn't really enough time to re-baste with sauce either.
I haz a way to go yet to catch the BBQ Master.
