View Full Version : WAGYU - February delivery

Hi folks!

Here comes another wagyu delivery.

Delivery will occur on Thursday 18th of February. Depending if I have a lot of orders, I might spread it out over two days, which will mean that NOR will get theirs a day earlier. But will let you know if that's the case well beforehand.

Please place your orders by lunchtime Friday 12th of February.

Here are the prices:

MBS 3/4
Porterhouse $40 a kilo
Scotch Fillet $40 a kilo
Tenderloin $50 a kilo
Rump $20 a kilo

MBS 5
Porterhouse $50 a kilo
Scotch Fillet $50 a kilo
Tenderloin $60 a kilo
Rump $25 a kilo

MBS 6
Porterhouse $60 a kilo
Scotch Fillet $60 a kilo
Rump $30 a kilo
Tenderloin $70 a kilo

MBS 7
Porterhouse $70 a kilo
Scotch Fillet N/A
Rump $32 a kilo
Tenderloin $80 a kilo

MBS 8/9
Porterhouse $80 a kilo
Scotch Fillet $85 a kilo
Rump $34 a kilo
Tenderloin $95 a kilo

I can also get you angus as well, prices are the same as wagyu 3/4. Angus doesn't have as much marble as wagyu, however there are people who may prefer that. Personally I reckon wagyu is better, but like with everything else, opinions can vary.

Approximate weights are:
Porterhouse 2.7 kg
Scotch Fillet 4.5 kg
Tenderloin 2 kg
Rump 6 kg

To all new people who haven't bought any from me yet, please PM me your mobile number and delivery address. Exact price won't be known until after 5pm on the day when I pick up the meat, as weights obviously vary. I will SMS you the exact price well before my arrival so you have enough time to organise your cash. <--- if you happen to order for your mates, please explain that fully to them, because last time I came across two people who thought they will be getting a chunk that weighed exactly x amount of kilos as stated above, and weren't too happy about getting extra 300 grams or whatever. Cheers! :)

just wondering do you know what the MBS rating would be on normal steaks etc at say woolworths and coles ?

Sully
07-02-2010, 05:12 PM
0. maybe 1 if you get lucky. marbling aside, the meat itself is much much better. super tender and tasty.

Ryan1080
07-02-2010, 08:57 PM
Coles/Wollies? 0 indeed. But yes, it's also the meat quality/tenderness etc. that makes a massive difference. Coles/woolies steaks just don't compare.

thommo
07-02-2010, 09:36 PM
cool. i just wondered if it was just a rating of the amount of marbling or the cut of the meat etc.

and on the last order i got some bones with mine for the dog. if anyone else gets these the boxes have 5-6 MASSIVE bones in them. good value for $4

Ryan1080
07-02-2010, 09:51 PM
That's a rating of the marbling. There's other factors to consider too, such as fat and muscle colour etc, but they tend to be closely related to marbling level anyway. Hence why they only bother marketing it based on marble based score only.

Ah, good to hear about the bones. I'll check if they're again available this time.

I got different grades of rump last time. Although good/tender (and cheap) for general purpose cooking, I missed the full on flavour that the other cuts delivers! Although the top section of the rump tasted alot better?

Anyway this time:
MBS 6
Scotch Fillet $60 a kilo
Scotch Fillet 4.5 kg
Please!

Yeah, rump is the lowest of the cuts, but then value for money wise it's still very good. I'm not that good at a cow's anatomy, but I think top half of the rump is closer to the good bits, hence why it probably tasted better.

So that's one MBS 6 scotch fillet isn't it?

Is it OK to freeze this stuff for a week and then use? Or is it best to slap it on the BBQ ASAP? If thats the case, how long can you keep it in fridge? (No- not a retard, just want to make sure there are no special handling rules etc.)

Reading over that post - I do sound like a retard. I assume surely you can freeze if you get such a large chunk.

Ryan1080
12-02-2010, 10:09 AM
It comes vaccuum packed. It can safely stay in the fridge like that unopened for a week or two. I've once kept some in the fridge unopened for three weeks and it was still fine. This meat has been aged for some time in the cool room anyway... Once you open it, you should either eat it within a few days, or freeze it. Freezing it is not a problem, just make sure you wrap it tightly, and squeeze all the air out, or as much as you can. If you can vaccuum seal it yourself it would be the best. Other than that, no other special handling requirements. Oh, when before you cook it, let it sit out and come up to room temperature first, so the marbling melts better. Hope that helps :)

Ryan1080
12-02-2010, 10:10 AM
Oh, and I've had kept some of it frozen for months. As long as it is wrapped properly with air squeezed out it's still quite good. I need get motivated and buy a vaccuum packing machine, would be so much easier!

Rantopotamus
12-02-2010, 11:30 AM
Vacum packing FTW!!!

Ive had it in freezer for almost 4 months.. was still good but not really WAGYU - ish...

Ryan1080
12-02-2010, 11:37 AM
Fresh is best for sure. Should be very very close to the same if frozen vacuum packed though. I haven't got one, so I squeeze as much air as I can, but there will always be some tiny air pockets remaining. It's the air that sort of dries the meat out when frozen, so squeeze it out as much as you can.

I swear if you ever stop doing this I'm going to neck myself then and there.

Ryan1080
18-02-2010, 02:34 PM
Hahaha. Spoken like a true addict. I understand.

I hope this will continue. Griffin Coal has gone broke, and they're selling off other businesses, looks like out of all of Griffin Group companies the ag division will be the only one remaining. Hopefully they'll last through this, or I will have to neck myself as well haha.

Oh, I have resigned from Griffin this month, however I have personally ensured I will still be able to source the wagyu in the future, provided they don't go broke lol!
