Ok, I'm able to organise a group buy for the wagyu beef to those interested, as per this thread: http://antilag.com/forums/showthread.php?t=23980 I will be able to get some of it from our staff sales, but if there's a lot of orders I'll do a seperate buy internally within my workplace at wholesale prices.

They come vacuum packed in whole chunks, in various sizes depending on the cut. The following is available:

3/4 MBS grade
3kg Porterhouse $40 per kilo
4-5kg Scotch Fillet $40 per kilo
2kg Tenderloin $50 per kilo

5/6 MBS grade
3kg Porterhouse $50 per kilo
4-5kg Scotch Fillet $50 per kilo
2kg Tenderloin $60 per kilo

7/9 MBS grade
3kg Porterhouse $60 per kilo
4-5kg Scotch Fillet $60 per kilo
2kg Tenderloin $70 per kilo

The weight varies from cut to cut, so weight is approximate. Let me know what you'd like in the next day or two and I should be able to sort you out.

Few of you missed out last time so let me know if you still want it too.

I bought some on the tenderloin in the last buy and it blew my balls off. Really good stuff. Top notch.

When will the group buy close and when will we be expecting to receive it? Before Christmas i hope?

Yeah I am meant to place my order by monday. Depending on how many people order, I may not be able to get staff sales, so i will organise another way to get it. Either way, this one is definately coming before christmas. :D

excuse my n00bness, but when u say "4-5kg Scotch Fillet $50 per kilo" do u mean that its one bit of steak thats 4-5kg? or theirs like 3 900g ones in there?

ill be keen either way just wanting to make sure i dont buy a stupid amount of steak haha

Ok, to clarify, they all come in one chunk, vacuum sealed. I'm not a butcher shop, I'm just a dodgy looking dude with a hundred kilos of meat in the boot, so won't be cutting anything up for you :) They are not cut up in slices or anything. The sizes of each chunk tend to vary, so Porterhouse tends to be between the 2.5 to 3.5 kilo range. Scotch Fillet can come in anything between 3.8 to 5.5 kilos. Tenderloins tend to be around the 2 kilo mark, give or take half a kilo, although some can be even 3 kilos.

Minimum buy is one pack of any cut. If you only want a kilo of something, chip in with a mate who wants some too, buy the pack, and cut it up yourself :)

And by the way, depending on where you live, I may be able to deliver or meet you half way. I haven't got a fridge big enough to fit 100 kilos of meat in, and hoping for people to turn up, so I'd rather be sure I get rid of most of it the same day I get it.

Put it this way, I'm a shithouse cook. Yet the wagyu steak I cook, on its own without any sauce, nothing, tastes much much much better than a top class chef cooking a non wagyu steak... WHen I go to restaurants, I won't order steaks anymore unless they are wagyu. ANything less I get disappointed, and I used to only have steaks at restaurants before I tried wagyu. I've had mates buying a kilo for the first time just to try coz they weren't sure, they all buy wagyu from me now since. No pressure though, chip in with someone else and try a bit, I know you will love it, this stuff sells itself, you will ask for more next time, guaranteed :D

Try the lower grade first if you've never had it before. THe higher grades are heaps better though. I personally buy the 5/6, just to balance out the cost versus the quality haha, eating 4 steak dinners a week ends up being quite pricey at the end!

I'm placing the order on monday, so if I can have all orders by mid to late monday afternoon it would be great. Delivery shoud be in about a week and half, probably on thursday the 18th. Let me know exactly what you want, and post or PM me your mobile number and whereabouts you live so I can call you on the day and perhaps deliver it. I usually spend all evening delivering meat to my mates, so if you are on the way, I'll drop it off, no problem.

MBS is the marble based score. They got a good article on wikipedia and all over the net about the characteristics of wagyu, but basically the more marble in the meat the better the score, ranges from 0 to 9. Marble is the white dots of fat all over the meat (don't confuse that with the veins you get in the coles meat). That fat melts when cooked and that's what essentially gives it the awesome flavour, texture and tenderness. It is good healthy fat too, as it is monosaturated with omega 3 oils... read up about it :)

This is gonna go down mint over the xmas break. Mrs parents just finished installing one of those pimp daddy bbq's with the big staino bench top, sink and all the crap outside by the pool. Few eski's full and a couple kg of meat sounds good for a Sunday sesh.

Haha, yeah? My last order was almost $3K worth of meat. This time there are also antilag orders... I should seriously charge Rick commission hey hahaha :P I think either Scott or Angela, or could have been Ryo I can't remember, told me a while ago that if I can regularly move at least half a ton (fark me that's a lot of meat!) a month they can think about some sort of commission haha. Hmmmm, I'd have to increase my client base fivefold to get there, (and probably buy a van) still a bit to go goddamit!! :fingers:

Least you have honest people up there.

Where we are they used to shove it in the fridges and the bloody miners nicked a whole heap sometimes so they were hesitant to restart bringing it down here but i got onto that bird that handles it and the dude brings it down personally and watches the girls sort it out.

All payed for via pay deduction to get around the stealing.

No one will be disappointed with this meat.

Last time i bought the "low end" 3/4 rump and it was bloody mint.

Also they have Angus sometimes (depending on the farm cycle)

What I find hillarious about that, is that some people on the site borrow company machinery to do up their backyard haha. I guess same mentality goes for random wagyu in the fridge, what's company's is theirs haha

Yeah, there has been few 'accidental' thefts here also haha, but yeah, hardly ever happens, more like people take someone else's meat by mistake.

Wagyu > Angus imo

Anyway, few people missed out on the tenderloins, so I have messaged them to see if they're happy with another cut. Apparently we have some leftovers, possibly porterhouse, not sure what grade.

Let us know what you thought about the meat. If you want more I can organise another buy.

Just a quick tip though, don't cut it up yet, if you're only having it on the 28th... once you cut it you will need to freeze it. Otherwise the way this chuck is now , it will easily last a week in the fridge without freezing as it is vacuum packed.

Cut the end off and chucked it on a bbq last night. I cooked it terribly, turned it too many times on an old uneven heated BBQ, and it turned out better than the $80 steak I had at Rockpool in Melbourne. Top stuff, cheers again Ryan!

Wagyu is the BEST type of beef you can get Locote. They're cows who are genetically pre-disposed to a lot of marbling. Nothing out there beats it. You probably wanna read up about it on wiki or google to know more. If you ask anyone who's had it, they will all agree it tastes 100 times better than any other non-wagyu steak they've had.

And reason why it is so expensive, for starters they are kept alive longer, around 3 or 4 hundred days, can't remember now. There's extra work and expense involved to breed them. For instance, they are fed much more expensive grain as well as beer (or traditionally sake). We employ people whose job it is to provide massage to the cows. They are also exposed to nice soothing music when they're in the barn. I'm not familiar much with what it takes to breed them to be honest, all I really care for is the taste lol. But I know we're also conducting further R&D to make the meat even better. The price that I can get it at is not expensive at all. A top grade 7/9 MBS Tenderloin at DJ's will set you back 200 bucks a kilo... hence 70 bucks is a bargain :) Then again the lower grade 3/4 MBS scotch fillet or porterhouse, at 40 bucks a kilo, is not that much more expensive than crappy coles meat, or the average butcher meat. It would still retail for around 100 bucks at DJ's. And spare a thought for poor japs who pay about 500 bucks a kilo for theirs. We got it good here I reckon :)

Also, any restaurant selling wagyu steaks will charge about 80 or 100 bucks for a small 200 gram steak, like Matilda Bay for example, where you still have to order the salad and vegies or whatever seperately to that. Having said that, I have come across one restaurant when I was in Brisbane that was selling a wagyu steak for 35 bucks, but it turned out to be a rump, which isn't the best cut, and is the cheapest.

For sure. Wagyu rump's still nicer than normal beef, but other wagyu cuts are way better, and it's noticeable too. Given how cheap the wagyu rump is though (I think 25 bucks a kilo), it's good value for a wagyu beef. Only downside is that it's so big haha, comes in massive 6 or 7 kilo chunks lol! It's good for massive bbq's. I had one at my house a while ago, whole 7 kilo chunk was enough to feed (and impress) 30 people. Then I keep the better cuts all to myself for private moments :p

LOL! No :) Should be able to do it with any half decent knife. THe colder the meat the easier to cut. I've cut frozen chunks before as well, not hard at all.

It is the most amazing tasting cut ive ever had, only once have i had it in Aus, no other cut compares.

Only cuts in wagyu that I can get is rump, porterhouse, scotch fillet and tenderloin. Having said that, each cut can have many different names, like porterhouse is sirloin or striploin, scotch fillet is also called cube roll, and tenderloin can also be called a fillet. I'll ask at work mate. I can bet you either of these wagyu cuts will own the one you mentioned out of a normal cow :)

Just spoke to the chick who takes care of it all, they're running behind in slaughtering these cows, was told the next delivery will be in early march, sorry guys :(

Luckily my freezer is stocked up for such scenarios :)

I slab of meat.. Be it 4-5kg scotch or ~2kg tenderloin. So basically spend atleast $120-160ish and you're in. Spend more and you survive the droughts!!

I was told today that there will probably be a delivery late next week. I'll let everyone know once that is confirmed. I just pulled my last frozen wagyu out of the freezer for tonight. There will be some heavy withdrawals for the next fortnight I think haha
