Simple question really. does anyone know any good butchers? NOR preferably. Said steaks will need to be thick and juicy. Said steaks may be getting marinated for a minimum for 24hrs, and cooked slowly on the bbq whilst numerous beers are consumed. Not worried about cheap prices. Just good quality steak. I am sick of the mrs buying cheap coles/woolies steaks.

do a rd trip down to harvey and buy a chunk of dead cow, you will not get freshed better tastin meat anywhere in perth.
Then u can cut steaks as fat or thin as u want then freeze the rest.
Its definetly worth the rd trip.

well i'm a bit biased as the whole of my dad's family are butcher's. But my old mans shop at carine glades called Torre and Mordini ourmet meats, will cut you whatever steak you want and they only use harvey beef. I belive they also stock waygu beef most of the time, or otherwise can get some in for you.

you can buy cryo-vaced harvey beef striploins at almost any butcher in perth.. tell them you want a side of beef for ribeye or sirloin depending on what your after.

usually cost you around $120-$150 ea, I find i'll get around 20-30 decent steaks out of one and they are always good quality sides (bought em at many diff butchers over the years.. just go for harvey beef if you can).

Its ok but the 1kg steak was terrible on the 2 occasions i've eaten it. Also its hardly 1kg of meat. The meat on the tripod thing is much better. I had a look at Hillarys and it was supposed to open mid October.. Should be good though

Had some good steaks and produce from Herdsman Fresh but it can be pricey. They do Wagyu but it comes in frozen i think?

Nothing can beat the Piston-Klause hot rock steaks though :D We need shit like that in Perth. Although the steak i had on Friday at Old Swan Brewery was easily the best i've had in Oz!

Soo these 1KG steaks at Hippo Creek, are they pretty massive?
Cos we're having a Perth Rotary Xmas lunch there in a few weeks and all the guys seem pretty hell bent on finishing these 1KG steaks :lol:

1 kg T Bones at Hippo are about 400-500 grams of meat, if you exclude the bone and fat. Very tasty, but not difficult to eat.

If you're in the Vic Park area, Bert's Butchers do some nice cuts of meat....Wagyu, etc.

Also, Globe Restaurant in the city has a $33 Wagyu Beef lunch special. F*cking awesome.

I work for a wagyu company, among others... I've been having wagyu steaks twice a week for over a year now, costs me fark all, in some cases roughly as much as coles POS meat. I get wagyu steaks for cheaper than wholesale, of all grades, 3/4, 5/6, and 7/9 MBS. We're talking in the 25/45/65 dollar range, depending on quality and cut. Rumps are the cheapest cuts, usually around the 20 dollar range, but top of the range tenderloins will be about 65 bucks a kilo... way better than $200 retail you'd pay at a butcher or David Jones though! I find scotch fillets the best for steaks though. Send me a PM, maybe I'll be able to hook you up, there's only a limit on how much staff can buy... All my mates buy it from me, they come vacuum packed of between 2 to 5 kilos.... I gotta warn you though, you WON'T have any other steaks after this one, very addictive!!

ps... good Fillet marinade

honey, soy sauce, sweet chilli sauce, garlic, pepper and olive oil

leave to marinade 2-3 days and cook as a roast or slice into steaks .... guaranteed to make you wet yourself.

Marinades are good. But often I just eat the wagyu on its own, without any additives, as you really get to taste it, and it's bloody good. The thing is, it is so marbled, with fat all inside it everywhere, it has a flavour in itself. I nearly came when I had my first 7/9 hahaha, so farken good! The other cuts, like the porterhouse are awesome for roasts too! It literally melts in your mouth! Again, I've done a few without marinades or anything, and the flavour within it was just heaven! Try it without marinades, you won't regret it!

zxz, you won't go back. I can't have normal steak anymore, not good enough, even at a restaurant. I'm not a good cook, but the wagyu I cook myself is 100 times better than an ordinary steak cooked by a top chef at a restaurant, no shit!

you ruin the natural flavour if you marinade it.

only use marinade if you get bored of the natural flavour or if yoru using a cheaper meat

if the meat is of tj high end spec quality then it requires no marinade.. its almost as bad as mixing grey goose with redbull. Blasphemy!

To go slightly OT, when i was at the restaurant at the 'Ring they had these "hot rock steaks". Steak cooked on a slab of something (not sure if it was actual rock) but it was like the opposite of cold rock ice cream. Looked the same. Anyone know what that stuff is? Steak was great but im sure PistonKlause isnt the only place in Europe who use that method.

Place doesnt look to bad and seems to be reasonably well priced

Apparently the hot rock gets heated for 6 hours and to 400degrees. It makes the food healthier and tastier and i guess a novelty thing

Exactly! Wagyu is a top quality meat, I've only ever marinaded it once or twice out of curiousity, and prefered it without. The natural flavour in it should be and will be sufficient, in fact it will be awesome! This isn't your $9.95 special at coles after all. There's a reason why it's so darn expensive.

Our wagyu is made here in WA, and is actually mostly exported to Japan and some to Korea. The japs come visit us everytime there's a shipment to check if it is up to their standard. We actually have a resident Jap fella who works in our office, who is employed by them for that purpose. It doesn't get sold much here in aus domestically...

But yes, there is wagyu, and then there is wagyu. I've heard of some breeders calling their meat wagyu, even though it wasn't 100% pure breed wagyu at all... :dizzy:

Right, I had two people ask me already what the grading means... basically it is a marble score (MBS), which goes from 0 to 9, 9 being highest. Marble is basically the fat within the meat. The more white dots you see the better the grade. Don't confuse that with the shitty coles meat with lots of white veins and crap throughout the meat. It's the bits of fat throughout the meat that make it so good. Fat itself is a good monosaturated fat with omega 3 oils and all that bullshit, so it is actually a healthy type of fat! Grade 3/4 is still a bloody good meat, if you haven't had wagyu before, I suggest you grab that first. You can tell the difference between 3/4 and 7/9. Wanna know more about wagyu, internet is your friend :)

We can get angus/wagyu through work... the stuffs bloody expensive though! Theres a butcher in floreat that sells it though in the big circle shaped shopping center block.

Thanks for the PMs guys. Got some interest in it. I am not sure if I will be able to supply all of you with my staff meat, so I may resort to a seperate group buy instead, I will advise later. Send in your EOIs to me anyway, so I can gauge some interest. With group buys, I will have to order the meat from the cool room by the carton, which is about 20 kilos in it, of the same cut, so depending on the cut,t here may be anywhere between 3 to 8 pieces of the same type. I'll advise the details later.

Sethor, we also do angus as well, and I can get some. I find that most people prefer the wagyu, although there are some that prefer the angus, it is a personal choice, those steaks are quite different though. Angus is also cheaper than wagyu by a bit. I prefer wagyu anyway.

Well, inspired by this thread, I went to the Stringy Bark Tavern in Wanneroo last night and gave the Carnivore Challenge a go... 800g of the juiciest steak, with chips and salad...

Being a fat pingpingpingping, I mowed through the steak with ease, struggled through the chips a bit (they were cold and soggy by the time I got to them), but it was the salad that got me...

They still counted it though and now I'm on the wall of fame (or shame)... It was the proudest moment in my life so far and I would like to thank Antilag.com for the inspiration to do something good with my life and for the greater community :yum:
